Pork Tenderloin with Texas Mesquite Black Bean Chipotle Salsa.

If you're looking for the perfect way to prepare a luscious pork or beef tenderloin, then look no further. Texas Mesquite Black Bean Chipotle provides just the right punch to flavor your meat to the max!

1 small (about 3 pounds) pork (or beef) tenderloin.
Olive oil
Sea salt
Freshly ground black pepper
1 (16 oz.) jar Texas Mesquite Black Bean Chipotle

Preheat oven to 375 degrees. Glaze the tenderloin with olive oil and season liberally with salt, freshly ground black pepper (I like to rub Big Dawg Cajun Seasoning all over pork tenderloin). Drizzle a little bit of olive oil in a skillet and then sear all sides of pork tenderloin. After getting meat a golden brown color, place in foil, fat side up, then pour the jar of Texas Mesquite Black Bean Chipotle on top of the meat. Seal foil and place in oven for 1 1/2 to 2 hours (depending on size of the pork tenderloin). When the meat is done, take out of oven and let rest for 5-10 minutes. Slice it into 1/4-to 1/2-inch thick slices.
